If you raise a cow from a calf, would it be possible to ride it like a horse?

Before horses were domesticated people actually rode cows. You can train a cow to take a rider, there are videos of it on youtube if you are interested. I don't think it would require you to raise it from a calf, but I'm sure you would need to adjust your training strategy. They don't think like horses.
